

Healthy Seafood Pizza

“Shrimp and mackerel! Pizza never tasted so good”
Preparation: 15 minutes
Baking Time: 20-30 minutes
Ingredients
1 pound mackerel fillet cut in chunks
½ pound large shrimp peeled, de-veined and washed and cut in chunks, save 5 of the largest whole shrimp with the tail on for garnish.
1 ½ cup premade Chef Ed’s Pizza Sauce
1 large onion sliced in half moons
1 large green bell pepper pitted and sliced in half moons
2 tablespoons fresh basil chopped
2 tablespoons fresh oregano chopped
½ pound mozzarella cheese grated
¼ pound freshly grated Parmesan cheese
¼ pound cheddar cheese grated
2 pounds premade Chef Ed’s pizza dough
½ cup cornmeal
Preparation
pre-heat oven to 375 F.
Generously sprinkle some cornmeal on a large rolling board and roll out your pizza dough to fit a large pizza pan. Once done place rolled out dough in pizza pan and add the pizza sauce followed by all the cheeses then the shrimp, mackerel, onions, green peppers, basil and oregano.
bake for 20 to 30 minutes or until crust and toppings are light to brownish dark.
allow to cool for 5 minutes slice it up then serve.
