

Turkey Leftover Quesadillas

“This is a great and tasty one especially if you’re looking for that extra protein”

Cook Time: 8 minutes
Ingredients
- 4 Flour tortillas ( 9-inches wide)
- 1 cup, shredded or chopped turkey meat
- ½ pound cheddar, mozzarella cheese grated
- ¼ cup finely diced white onions and green peppers mixed
- ¼ teaspoon sea salt or to taste
- 2 tablespoons sliced jalapenos aged and marinated in vinegar (most canned jalapeno versions can be used)
- ¼ teaspoon ground black pepper
- 3 tablespoons fresh cilantro chopped
- 1 teaspoon garlic crushed and finely diced
- 3 tablespoons canola oil
Preparation
- Heat a large skillet on medium high heat
- Add 1 ½ tablespoons oil to coat pan surface
- Place one tortilla onto the pan and half of the cheese on the tortilla surface
- Then add half of the chicken, half of the diced onions and peppers and ½ of the garlic on top of the cheese and allow to cook for at least three minutes
- Next gently fold one half over the other half and gently press down to seal the cheeses
- Cook for two minutes more then turn over careful not to drop any of the insides out
- Cook until the cheese has melted which should be around 3 minute more then remove from heat and set on cutting board for cutting into triangles.
Serve with Mexican salsa,guacamole and cream.
