

Roasted and Healthy Peanuts

“Peanuts and peanut butter contains over 30 essential nutrients and phytonutrients”
Prep time: 5 minutes
Roasting time: 35 minutes
Ingredients
3 pounds raw shelled peanuts
4 tablespoons canola oil
2 tablespoons peanut oil
2 tablespoons sea salt (try using garlic salt or onion salt or any other kind vegetable salt)
Preparation
Heat extra large frying pan to high. Once the pan is hot add the peanuts and for the next 35 minutes mix occasionally careful to occasionally check that you do not over roast as it will give the peanuts a bitter flavor. To check doneness remove a few peanuts after the allotted time and place on cutting board until it cools off then take a bite to see if the peanuts have that “cracking” sound and feel.
When done remove from heat and allow to cool completely. These can be stored in an airtight container and do not require refrigeration. Great as a snack, for parties, mixed with berries and served over granola or oatmeal.
