“This traditional, warm and hearty soup is a favorite for adults and kids.”

Ingredients

3 large white onions thinly sliced

2 small red onions thinly sliced

2 cloves of garlic diced

1 bay leaf fresh or dry

1 teaspoon chopped sage fresh or dry

2 pints (little over 1 liter) fresh vegetable, beef or chicken stock

3 tablespoon olive oil

3 tablespoons good cognac or dry white wine

1 toasted French loaf in slices

10 ounces sliced Swiss cheese

4 ounces grated Parmesan cheese

1/8 teaspoon Sea salt

1/8 teaspoon Ground black pepper

Preparation

Heat up a medium size pot to high.  Once hot add the olive oil.  Add both types of onions, the garlic and mix well for 10 minutes stirring occasionally on medium heat until the onions have caramelized and have a translucent look to them. Next add the sage, bay leaf, cognac or wine, stock, sea salt and pepper and mix well. Bring to a boil and simmer for 10 minutes and then turn the heat off.

Place the oven rack on the top slot and preheat your oven to F 350.  Prepare your soup bowl by placing a piece of the sliced and toasted bread at the bottom.  Pour a ladle full of soup with lots of onions into the bowl, careful not to fill to the rim.  Add 2 tablespoons of the Parmesan cheese to the top of the soup and place two slices of the Swiss cheese on top.  Place the soup into the oven on the top rack and broil for 20 minutes or until the cheese has browned and started to bubble.  Carefully remove soup from oven with oven mitts and set aside to cool off for 5 minutes then serve.
