

Low Cal Poached Tuna Steak Meal

Ingredients
- 2 six ounce albacore tuna steaks
- 2 tablespoons fresh lime juice
- 2 ounces dry white wine
- 3 bay leaves
- ¼ cup finely chopped red onions
- 1/3 cup cilantro chopped
- ½ teaspoon sea salt
- 1 ½ cup tuna fish stock
- 5 cups chicken stock
- Sea salt
- ½ lime wedge
Ingredient for Side Dish
- 1/2 cup cleaned and destalked broccoli into large bite size pieces
- ½ cup cleaned and destalked cauliflower into large bite size pieces
- ½ cup carrots peeled and sliced
- ½ cup green beans washed and cut in halves
Preparation for Side Dish
Bring the chicken stock to a boil in a large boiling pot. Then add all the vegetables plus a good pinch of sea salt and blanch for 3 minutes. Remove from water, drain and set aside in a warm area.
Preparation for fish
Bring to a gentle boil the following ingredients; lime juice, water, wine, bay leaves, stock, sea salt and the onions. At a gentle boil slowly add the tuna steaks to fit the pan and sprinkle with the cilantro. Cook for 15 minutes or until the fish can easily flake with a fork then place on serving plate with 1 cup of the blanch vegetables and the lime wedge.
