This is a great dish to serve to the entire family and heavy on omega 3’s”

Ingredients

  • 2 six ounce albacore tuna steaks
  • 2 tablespoons fresh lime juice
  • 2 ounces dry white wine
  • 3 bay leaves
  • ¼ cup finely chopped red onions
  • 1/3 cup cilantro chopped
  • ½ teaspoon sea salt
  • 1 ½ cup tuna fish stock
  • 5 cups chicken stock
  • Sea salt
  • ½ lime wedge

Ingredient for Side Dish

  • 1/2 cup cleaned and destalked broccoli into large bite size pieces
  • ½ cup cleaned and destalked cauliflower into large bite size pieces
  • ½ cup carrots peeled and sliced
  • ½ cup green beans washed and cut in halves

 

Preparation for Side Dish

Bring the chicken stock to a boil in a large boiling pot.  Then add all the vegetables plus a good pinch of sea salt and blanch for 3 minutes.  Remove from water, drain and set aside in a warm area.

Preparation for fish

Bring to a gentle boil the following ingredients; lime juice, water, wine, bay leaves, stock, sea salt and the onions.  At a gentle boil slowly add the tuna steaks to fit the pan and sprinkle with the cilantro.  Cook for 15 minutes or until the fish can easily flake with a fork then place on serving plate with 1 cup of the blanch vegetables and the lime wedge.
