

Healthy Garlic Soup

Ingredients
2 heads of garlic peeled crushed and finely diced
1 ½ cups red New potato’s washed and chopped (leave the skin on)
1 large red onion peeled and chopped
½ teaspoon fresh ginger peeled and finely diced
1 stalk of celery sliced
4 cups chicken, beef, seafood or vegetable stock
¼ cup red wine
2 tablespoons fresh cilantro finely chopped
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons olive oil
Preparation
Heat a large sauce pot to high. When hot add the oil, allow to heat up, then add the garlic, onions, potatoes, celery, ginger, sea salt and pepper and mix briefly. Allow the veggies to sauté for 5 minutes then add the red wine and stock mix briefly then cook on medium high for 15 minutes. Turn heat off and sprinkle the cilantro over the soup. Serve in large soup bowl and serve.
