Ingredients

  • 1 pound chicken breast fillet
  • 3 cloves garlic peeled
  • ¼ cup fresh cilantro chopped
  • 1 tablespoon fresh oregano chopped
  • ¼ cup olive oil
  • 3 medium ripe red tomatoes cut into wedges
  • 1 teaspoon capers
  • 1 teaspoon sea salt
  • 1 large leaf lettuce washed and torn into bite size pieces
  • 5 large ripe Italian tomatoes washed and cut into bite size wedges
  • 1 ½ cup cherry tomatoes cut into halves
  • 10 fresh basil leaves
  • 1 tablespoon toasted pumpkin seeds
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon toasted sunflower seeds
  • 1 small white onion peeled and finely diced
  • 3 tablespoons red wine vinegar
  • 4 tablespoons extra virgin olive oil
  • 1/8 teaspoon ground black pepper
  • 1/8  teaspoon sea salt
  • 2 tablespoons freshly grated Parmesan cheese GARNISH

Preparation

Place the garlic on a cutting board, sprinkle ½ teaspoon of sea salt on top of the garlic and use the side of a large cutting knife to gently mash the garlic into a paste.  When completely mashed add the paste, the cilantro, oregano, lemon zest and olive oil to a medium size mixing bowl and mix well.  Gently pour the garlic mixture over the chicken breast cover and marinate in the fridge for 15 minutes.

Dressing  and salad preparation

In a large medium size mixing bowl add the pumpkin seeds, sesame seeds, sunflower seeds, onion, olive oil, pepper and sea salt and mix until blended.  In another large mixing bowl add the lettuce, tomatoes and basil leaves then gently add around 4 large tablespoons of the dressing over it and mix with a large spoon.   Then take a large scoop of the now dressed salad and place in the middle of your serving dish and set aside.

Chicken preparation

Heat your grill to medium high, remove the chicken breast, gently shake off the excess marinate and place on the hot grill and cook for around 8 minutes per side or until cooked through and the juices run clear.  Once cooked set on cutting board and very carefully (because it will be very hot still) cut the breast into bite size pieces.  Add the pieces of chicken to the top of the tomato salad sprinkle with fresh parmesan cheese and serve.
