This rice pudding recipe it's very creamy, and just sweet enough.
cooking time 45 min
Serves about 8-10 servings
Ingredients:
2 cups of rice
4 cups of water
1 can of evaporated milk
1 can of condensed milk
1 1/2 cups of whole milk
Peel of one lime
1 tbsp. vanilla extract
Pinch of salt
3 cinnamon sticks
cinamon powder
In a large pot, place the rice, 4 cups of water, lime peel, and cinamon sticks, bring the rice to the boil and cook for 20 minutes, untill tender.
Remove pot from the heat & drain the rice & take out the lemon peel, leave the cinamon sticks.
Add the 1 1/2 cup of milk, condensed & evaporated milk, pinch of salt and tbsp of vanilla to the rice and cook for about 25 min, or until thiken.
Serve chilled or warm, sprinkle cinamon powder over the rice pudding before serving.
