    Shrimp and Crabmeat Cocktail with Kumquats

    “Great for cocktail parties or just between close friends”
     

    Preparation Time: 15 minutes

    Ingredients

    2 pounds large shrimp peeled and deveined

    1 ½ pounds Lump crabmeat

    2 kumquats

    ¾ cup premade cocktail sauce- check out my own cocktail recipe here

    4 large romaine leaves washed and patted dry with a cloth

    ½ cup dry white wine

    3 dry bay leaves

    ½ teaspoon sea salt

    3 tablespoons fresh lime juice

    5 cups ice cubes

     

    Preparation

    In a large mixing bowl add the ice and fill halfway with water and set aside.

    In a large pot heat filled halfway with water add the wine, lime juice, bay leaves and sea salt and bring to a rolling boil over high heat. *Then add the shrimp a few at a time and cook for 3 minutes mixing only slightly.* At three minutes remove, drain and place in the prepare large mixing bowl filled with ice water. After adding the shrimp mix with a spoon to hurry the cooling process. *After three minutes drain thoroughly and set on a plate.

    After 3 minutes in a medium size bowl add the crab meats to fill ¾ s of the bowl followed by the cocktail sauce then add the shrimp to the lip of the bowl to fill it halfway you should be able to get around 18 on the lip.

    This looks great !!!! Like the idea of adding wine, lime juice, bay leaves and sea salt to the water before throwing in the shrimp, it must give it an extra kick.
