Preparation Time: 10 minutes
Ingredients:
2 cloves garlic finely diced
1 medium zucchini sliced
1 medium red onion in thin slices
2 (4 x 6 inch) French bread
6 tablespoons organic mayonnaise
1 ½ teaspoon lime or lemon juice
6 green olives sliced
5 tablespoons extra virgin olive oil
¾ cup red bell peppers sliced
¼ cup feta cheese crumbled
Preparation
In a large mixing bowl add the mayonnaise, garlic and lemon juice, mix and set aside in the fridge.* Next, preheat your grill to medium high.* Then brush the vegetables and grill with oil and place the peppers, onions, squash and zucchini on the grill and cook for 3 minutes. *Once done remove from grill and set aside in a warm place.** Spread the mayonnaise on the bread, add the sliced green olives and sprinkle the feta cheese then place on your hot grill cheese side up and cover with a large lid for 3 minutes. **This procedure will warm your bread up and also slightly melt the feta cheese. Remove from grill and layer with the warm vegetables, sprinkle a good dash of sea salt on the sandwich and serve.
