    Parmesan Rosemary and Onion Crusted Lamb Chops with Mashed Cauliflower

    “These chops will go great with mashed cauliflower”
    Preparation: 25 minutes

    Cooking Time: 20 minutes

    Ingredients

    6 four ounce lamb chops
    1/3 cup Dijon mustard
    1 cup fine dry bread crumbs
    4 tablespoons extra virgin olive oil
    ½ cup freshly grated Parmesan cheese
    2 tablespoons garlic peeled and minced
    2 tablespoons rosemary leaves
    1 tablespoon sea salt (for boiling water)
    ½ teaspoon sea salt
    ¼ teaspoon ground black pepper
    1 large red golden delicious apple pitted and cut into slices GARNISH
    1 large head of cauliflower washed and destalked into bite size pieces
    ½ stick butter
    1 teaspoon sea salt
    2 cloves garlic minced
    1 medium white onion minced
    ½ cup milk
    2 tablespoons cilantro chopped

    Preparation

    Put a large pot with water to boil.* Add 1 tablespoon of sea salt.* Once the water is boiling add the cauliflower and cook for 10 minutes or until the cauliflower is very soft and a fork can penetrate it easily. *Once it is soft enough remove from water and drain.* In a large mixing bowl add the butter, onions, garlic, milk, cilantro and sea salt then add the drained cauliflower and mash until well blended and mashed. *Set aside in a warm place.

    Preheat oven to 275 F.

    In a medium size mixing bowl add the Dijon, bread crumbs, olive oil, parmesan cheese, 1 tablespoon garlic and rosemary and blend until well mixed. *One at a time placed the chops in the bread crumb mixture and coat and turn on both sides and shake off excess crumbs. *Place on a baking sheet and continue until all chops are coated and placed on the baking sheet and place in the hot oven for 10 minutes or until the crust are golden brown and slightly crispy. *Remove from oven and place on serving plate along with a large ladle full of the mashed cauliflower on the side and the sliced apples serve.
