Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients
2 six ounce albacore tuna steaks
2 tablespoons fresh lime juice
2 ounces dry white wine
3 bay leaves
¼ cup finely chopped red onions
1/3 cup cilantro chopped
½ teaspoon sea salt
1 ½ cup tuna fish stock
5 cups chicken stock
Sea salt
½ lime wedge
Ingredient for Side Dish
1/2 cup cleaned and destalked broccoli into large bite size pieces
½ cup cleaned and destalked cauliflower into large bite size pieces
½ cup carrots peeled and sliced
½ cup green beans washed and cut in halves
Preparation for Side Dish
Bring the chicken stock to a boil in a large boiling pot. *Then add all the vegetables plus a good pinch of sea salt and blanch for 3 minutes. *Remove from water, drain and set aside in a warm area.
Preparation for fish
Bring to a gentle boil the following ingredients; lime juice, water, wine, bay leaves, stock, sea salt and the onions. *At a gentle boil slowly add the tuna steaks to fit the pan and sprinkle with the cilantro.* Cook for 15 minutes or until the fish can easily flake with a fork then place on serving plate with 1 cup of the blanch vegetables and the lime wedge.
