I do, u should try it, it's really good, it's a soup, but it's very filling, u got the meatballs & rice in there too
I would have taken pics, but camara was out of battery.
Here's the recipe
1 lb 93 % lean ground turkey
1 cup fresh whole wheat breadcrumbs
1 large egg
2 teaspoons ground cumin, divided
2 teaspoons dried oregano, divided
3/4 teaspoon freshly ground pepper, divided
1/2 teaspoon salt, divided
1 tablespoon of canola oil
1 large white onion, diced,
3 minced garlic cloves
2 carrots, diced
3 poblano peppers, diced
6 cups reduced sodium chicken broth
(or u can make your own)
1/2 cup instant brown rice or 1/2 of cooked brown rice
2 tablespoons lime juice
1 jalapeno, minced
2 tablespoons minced fresh cilantro
Line a large baking sheet with wax paper. Put turkey, breadcrumbs, egg, 1 1/2 teaspoons cumin, 1 1/2 teaspoons of oregano, 1/2 teaspoon pepper and 1/4 teaspoon salt in a bowl.
Mix gently untill combined. Shape the mixture into 1 1/2 inch balls and place in baking sheet.
(makes about 20 meatballs)
Place turkey meatballs in fridge for at least 20 min.
Heat oil, add onions and carrots and cook, stirring often, untill onions begin to soften (about 4 min) Add peppers, garlic, tomato, 1/2 teaspoon of ocumin, 1/2 teaspoon of oregano, 1/4 teaspoon of pepper and 1/4 teaspoon of salt.
Cook, stirring often for about 1 min, add broth, increase heat to high and bring to a boil, reduce heat and simmer for 5 min.
Submerge the meatballs in the simmering soup, return to a simmer and cook for about 8-10 min. Add rice and cook, stirring occasionaly, until tender, (about 5 min)
Remove from heat and stir in lime juice.
Garnish with jalapeno and cilantro.
Makes about 4 servings
Calories 288 (per serving)
Fat 10 grams
Carbs 27 grams
Protein 24 grams
Fiber 6 grams

We looove Italian food, but don't get to eat it often since most recipes are so high in carbs
So I try to make lighter, healthier versions of what I like..
These meatballs are actually moist, I wouldn't make them with 99 % turkey thou, I've tried and they come out too dry, u need some fat in there

Last night we had swai Fillets, sparagus, wild rice..
Tonight we're having grilled chicken breasts, some veggies for me & P & mashed potato & veggies for the kids..

Yeap, it's a white fish, it's got a mild taste & light flaky texture, it can be broiled, grilled & coats well too... I bought it for the first time a few months back, we buy a 2 lb bag, comes frozen and is inexpensive.
(I think is a type of catfish)

Salmon is definitely king, our fav for sure !!
With the amount of protein P needs to eat a day, if all I bought is Salmon, I think we would be bankrupt..

Must be a location thing..do you buy your salmon frozen? it can be mucher cheaper that way..and is there any fish markets there? that can make it cheaper aswell...as theres no packaging and bigtime ship fees

I don't like frozen Salmon, I've tried it before, and doesn't taste the same imo, it could be in my mind, we do buy from a fish market sometimes, but, we mostly we buy from a wholesale store.

I know what you mean, I'd rather buy fresh..but when I'm pre-packing my lunches for a week I throw the taste quality out the window...quantity over quality I guess..if I was cooking for more than it would be different...And cooking for a little person and myself is easy.

I hear you, I spend a big portion of my day cooking & prepping meals, it's like a full time job, but all worth it, better than buying the kids fast food..
Today, we had turkey chilli, and turkey burgers for the kids & P, turkey patty & veggies for me.

I've never tried Tilapia...has any of you ever tried walleye..somtimes people call it pickerel....? VERY tasty!

Never heard of it, or tried it, does it have a mild taste ? I love fish, so I'll probably like it.. I grew up in a house close to the ocean (fishing town) & my dad and brothers would go fishing every weekend, I probably ate seafood 3-4 times a week growing up, lots of shrimp, lobster, all kinds of fish..
I never got tired of it thou, I still love it
Tonight we had beef tariyaki, some brown rice & some salad, and we're doing some fire pit s'mores tonight, story telling by the fire pit & some s'mores.... What's better than that ??

Sounds Good! You would like walleye..it's a white meat fish...very good in many recipes..doesn't have a fishy taste at all....very delish! It's a fresh water fish..in the u.s michigan has many lake that contain walleye..not sure where else though...

You may have a hard time finding it in stores, a fish market may have them.
