    Default Chicken Cacciatore
    borrowed from "thechef"


    3 tbls. olive oil
    3 boneless skinless chicken breast
    1 cup chopped onions
    1 cup chopped carrots (shredded if possible)
    1 clove garlic
    1 stalk celery, minced (finley shredded)
    1 lb can of chopped tomatoes or fresh
    1 bay leaf
    1/4 cup of pulverized dried rosemary
    1 samll can chopped mushrooms
    1/2 cup cherry wine

    Heat oil and brown chicken well on all sides. Remove chicken. Add the oil and onion and next 4 items and saute, stirring until onion in lightly golden brown in color. Put tomatoes thru a strainer to remove water and seeds and add. Add remaining items except the sherry, let simmer for 5 minutes. Correct the seasoning to your taste then return the chicken and let simmer, covered, until the chicken is fork tender. Stir in sherry, and let simmer for 5 more minutes.

    u know it sounded goog until Isaw 1/4 cup of Rosemary. Are u sure of the amount?
