Ingredients

  • 2 cloves garlic crushed then diced
  • 1 white onion chopped
  • ½ cup freshly grated Parmesan cheese
  • ½ cup white dry wine
  • 1 cup organic milk
  • 1 ½ tablespoons fresh oregano
  • 1 ½ tablespoon fresh basil
  • 16 ounces fettuccine pasta
  • 6 tablespoons olive oil
  • 2 tablespoons white flour
  • 1 Sea salt
  • ½ Ground black pepper
  • 1 medium plum tomato chopped

 

Preparation


Sauce

Heat a large frying pan to high, when hot add the olive oil then add the onions, garlic, sea salt and pepper and sauté for 5 minutes, then add the white wine, stir to mix then add the milk with the 2 tablespoons of flour, turn heat down to medium and stir constantly.  After 5 minutes of reduction add the parmesan cheese minus 4 tablespoons and mix well.  Add the oregano and basil, stir to mix then turn fire off.  Place sauce aside.

In a large boiling pot of water add some sea salt then add your pasta and cook for the recommended allowed time. (Keep in mind that it is not necessary to add oil to the water)  When the pasta is ready remove from water, strain then place on serving plate and add ¾ cup of the sauce on top and sprinkle with the remaining Parmesan cheese.
