Ingredients

4 green Golden delicious apples peeled-decored and cut in thin slices

3/4 cup brown sugar

3 table spoons freshly squeezed lime juice with pulp

1/2 teaspoons sea salt

2 teaspoon cinnamon

1/2 teaspoon freshly grounded cloves

3 tablespoons vanilla essence Frangelia variety or plain

1/2 stick whole butter

2 pound pre-made pie pastry

1 nine inch pie mold

1 cup white flour

1 raw egg lightly mix in a small mixing bowl and set aside with a pastry baking brush to coat the pie before it goes into the oven.

Preparation

Preheat oven to 325 F.

In a large mixing bowl add the sliced apples, then the cinnamon, cloves, vanilla, sea salt, brown sugar and lime juice and gently mix until well blended, cover and set aside.

cut the pre made pie dough in half and use one of the sides to start your pie pastry.  next, on a cutting board sprinkle a good handful of flour to cover the entire surface of the cutting board.

next with a rolling pin gently but forcibly spread the pie dough to cover the distance of at least 12 inches be mindful of sprinkling flour during the rolling process if the dough becomes sticky, the width should be no more that 1/8 inch thick.

next fold the dough in half and lay on the bottom of the pie mold making sure that the dough reaches and hangs just a bit over the edges.  picture of pie mold

Add the apple mixture to the pie mold and with the baking brush that has been dipped in the egg mixture brush the entire surface of the dough that meets the edges of the pie mold.  This will assure a proper seal when you lay the top part of the rolled out dough on the pie.

next repeat the procedure of rolling out the pie dough to 12 inches and set aside.  Any leftover dough can be wrapped in plastic wrap and kept in the fridge of freezer.

add the sliced apple mixture to the pie mold then add the second rolled out pie mold to the top and with a fork press down on the sides of the pie to seal toe pie good.  This will assure that the apple mixture inside will not bubble out and cause a burning mess in your oven.

there should be no excess dough hanging over the sides of the pie.

Now brush the entire top of the pie with the baking brush that has been dipped in the eggs mixture, this will assure that you will have a beautiful golden brown crust when the pie is done baking and is a perfect indicator as to when the pie is finished baking.

with a fork gently poke through the pie top to create a cross design.

place the pie in the preheated oven and bake for 20 to 25 minutes or until the pie has that golden brown shinny color.
