“This is a great smoothie for breakfast – and sometimes dinner or dessert! The soy milk adds more of a milk shake quality than the juice does & great for kids” try substituting any fresh juice instead of the soy milk for hot days”

 

Prep time: 5 minutes

Blender time: 30 seconds

Ingredients:

  • 1 cup fresh blueberries
  • 4 tbls peanut butter ( crunchy variety)
  • 1 cup soy milk
  • 1 tbls honey
  • Dash vanilla extract
  • 1 cup crushed ice
  • 2 tbls Melted dark chocolate
  • 1 straw

Preparation:

Place the ice first in the blender, then the berries, peanut butter, orange juice, honey, vanilla extract.  Blend for 30 seconds and pour into a Chilled hurricane or Collins glass. (Best way to chill a glass is to soak it in water and then place into your freezer for a good half hour)

Garnish with: melted dark chocolate, this can be done by slowly dropping small amounts into the drink, the reaction that you are looking for is for the chocolate to turn hard in small orange seed size bites.  This chocolate mix with the peanut butter will take you on many yummy sipping excursions.

  • Add 4 blue berries on a toothpick and placed on the lips of the glassware so that it lays horizontal.  Add a fresh orange slice cut in the middle (meat side) so that it can fit into the lip of the glass.   Enjoy
